Joachim Kastberg has always known he wanted to be an ice cream maker. His dream was to create ice cream and sorbet using the very best ingredients available—a product that tastes exactly like what it is, one that people would want to enjoy again and again. A product to be proud of serving. That was the dream.
The Ice Cream Maker from Silkeborg
At just 21 years old, Joachim took the leap into entrepreneurship and founded Kastbergs. His ambition was to establish a small creamery that could produce and sell ice cream and sorbet to local restaurants.
The first few years were tough. Joachim had to supplement his income by working as a sales driver for a local wholesaler dealing in fruits and vegetables. His days started at 5 a.m. as a sales driver, and only in the afternoons could he focus on his true passion.
It was also an exciting time, as Joachim tested his entrepreneurial skills by striking a deal with the wholesaler’s owner, allowing him to approach their customers to sell his products.
Eventually, Joachim began collaborating with leading wholesalers, enabling him to distribute his products across Denmark. By 2019, eight years after its founding, Kastbergs had outgrown its original facilities. The company relocated to Herning, moving into the premises of the food company Aage Damgaard, which also operates the restaurant chain A Hereford Beefstouw.
At the same time, Jes Nordentoft joined as the company’s director, tasked with professionalizing the business and helping Joachim develop it into a growth-oriented company.
Today, the company’s vision remains the same as it was in the beginning: to produce high-quality ice cream and sorbet for restaurants and ice cream parlors. The products are still sold through wholesalers to hotels, restaurants, cafés, and ice cream parlors in both Denmark and Germany.
Only the Very Best Ingredients for Our Ice Cream, Sorbet, and Soft Serve
We take great care in sourcing and selecting the finest ingredients for our creamery. Whenever possible, we prefer to buy locally. It makes perfect sense to us to purchase Danish strawberries, rhubarb, gooseberries, and more from local growers. This ensures access to high-quality produce, reduces transportation distances, and minimizes CO2 emissions.
We also source fresh milk and cream from the award-winning Them Dairy Cooperative, whisky from Stauning Whisky, and our own salted caramel sauce and marmalades, such as blackcurrant marmalade from Give Konfekture, as well as chocolate from Callebaut.

A Dream of Ice Cream
In 2012, I bet everything on my dream—a dream of becoming an independent ice cream maker and crafting ice cream every day. A product that restaurants, cafés, ice cream parlors, and food lovers would enjoy using and eating.
