I love rhubarb—not only because it’s one of the first crops we can harvest locally in Denmark, but also because it’s a fantastic vegetable with a beautiful appearance, vibrant color, and a delightful tart flavor. This dessert, featuring freeze-dried rhubarb, rhubarb cream, and sorbet, is truly a dessert of rhubarb with rhubarb.
