The tartness of rhubarb helps to provide a balanced flavor to the tart and other sweet dishes. When sugar is added to rhubarb, it reacts with the acidity and reduces the sour taste, transforming it from sour to sweet. This interplay between sugar and acidity gives the rhubarb tart its perfect balance.
