Benjamin Jensen
Since completing his training in 2009, Benjamin Larsen has served as head chef at both Color Hotel and Pakhuset in Skagen, before taking over as leaseholder in 2021 of the more than 90-year-old restaurant ship, Prinses Juliana, docked at Vestre Havnepromenade in Aalborg.

We created this dessert with rhubarb, which we love so much—its sweet and tangy flavor profile and wonderful texture make it fantastic to work with in the dessert kitchen. Here, we’ve combined baked and pickled rhubarb with meringue and Kastbergs Rhubarb Sorbet.
