Chocolate Ice Cream Made with Our Own Dark Chocolate

 In 2017, Joachim Kastberg visited Paris to meet with Callebaut’s development department, Or Noir. In this exceptional house, some of the world’s best chocolatiers assist companies like Kastbergs in creating their own unique chocolate.

Chocolate isn’t just chocolate—there’s a significant difference in how it’s made and the ingredients used. At Or Noir, Joachim was helped to blend a chocolate that not only has a unique flavor profile but is also optimized for use as an ingredient in ice cream.

The product, called Kastbergs Dark Chocolate, has a cocoa content of 72.7%, presenting a fruity chocolate flavor without the typical bitter aftertaste. Kastbergs Chocolate Ice Cream has a slightly higher fat content, which pairs beautifully with something tart, and can easily be shaped into scoops or quenelles.

The ice cream is, of course, delicious in many forms, whether in a delightful waffle during summer or in a beautiful dessert, like the two examples you can see here:
