Hazelnuts Grow Across Europe

Hazelnuts grow in most parts of Europe, including Denmark, and have done so for more than 10,000 years. Dried hazelnuts have a distinct flavor with a touch of bitterness, a characteristic aroma, and a rich, nutty fat content. Their versatility makes them a fantastic ingredient—especially in a creamy, flavorful ice cream.

At Kastbergs, we use hazelnut paste from a special region in Italy—Piemonte—which is widely recognized as the best area for hazelnut cultivation. The family behind Cascina Fontane, a farm that lives exclusively off hazelnut production, grows primarily Nocciola Piemonte I.G.P. delle Langhe—the most sought-after hazelnut variety for desserts, chocolate, confectionery, and other sweet treats. These hazelnuts are celebrated worldwide for their distinctive character and superior quality.

We source a dark-roasted hazelnut paste to ensure a bold and intense flavor in our ice cream. Since the base contains milk and cream, a strong, concentrated nutty taste is essential to maintain a rich, well-rounded profile.

A Favorite Among Chefs

Our Hazelnut Ice Cream is widely used in ice cream parlors and restaurants, where it is often a chef’s favorite. One of our featured desserts showcases this ice cream alongside red wine-poached plums, various creams, and crystallized dark chocolate—a combination that elevates the nutty and creamy notes of the ice cream.
