Homemade Lemon Marmalade

Lemon, White Chocolate, and Licorice Ice Cream – Three Flavors That Love Each Other

Working with different flavor combinations is always fascinating, and for this new creation, ice cream maker Joachim Kastberg has truly experimented with flavor pairings.

It’s well-known that lemon, white chocolate, and licorice complement each other wonderfully, as seen in many examples of chocolate with licorice or lemon.

For this ice cream, Joachim has developed his own lemon marmalade that we make ourselves today. This ensures the perfect lemon flavor—fresh, tangy, and sharp—while also guaranteeing the ideal consistency.

The lemon marmalade is folded into the ice cream, along with melted white chocolate and sifted licorice root powder. The licorice root powder is sifted to ensure an even distribution and the right amount, before gently mixing the elements into the ice cream to create a smooth and balanced result.
