Creamy Ice Cream with Intense Licorice Flavor

Licorice is a polarizing ingredient—some love it, and others find it too intense. For those who enjoy it, licorice adds a unique, multifaceted flavor that can bring out sweet, salty, and spicy notes in dishes. It all depends on the type of licorice used.

At Kastbergs, we use 100% licorice root powder to provide the ice cream with a concentrated, pure licorice flavor. The licorice root comes from the Glycyrrhiza glabra plant, grown in high-altitude regions of countries like Iran, Pakistan, and China. The extreme temperature variations in these regions create hardy plants that produce an intense flavor profile.

After drying, the roots are ground into powder, which holds the rich, concentrated taste that makes licorice a favorite in many desserts. Kastbergs Licorice Ice Cream is perfect for serving as a scoop or quenelle.

The Deep Layers of Flavor
Licorice has a deep, complex taste that ranges from sweet to salty, with a slightly bitter finish. When combined with the soft, creamy texture of the ice cream, it creates a unique symphony of flavors.

Many describe the taste of licorice as something that slowly reveals itself. First, there’s a sweet note, followed by a salty touch, and then a deeper, almost earthy flavor. This layered flavor profile is what makes licorice ice cream so fascinating for chefs.
