Rhubarb Sorbet - Many Possibilities

Many say rhubarb is the taste of summer. Perhaps because it is so familiar, easy to access, and harvested multiple times in a season. Or maybe because of its distinctive flavor—tart-sweet with notes of citrus, prunes, grapes, and unripe apples. Or maybe it’s a combination of all these elements.

In Kastbergs Rhubarb Sorbet, the well-known tartness is present, giving the sorbet a fresh and delicate flavor. The acidity makes it a perfect pairing for desserts, where it provides a delightful contrast to rich chocolate cakes, such as chocolate soufflé or a molten chocolate cake like Moelleux Chocolat.

We naturally use frozen rhubarb, which is thawed in our cooler rooms and combined with sugar. The sugar helps bring out the natural sweetness that develops during the ripening process. Afterward, we blend and sort the rhubarb before turning it into the delicious, creamy, and vegan Rhubarb Sorbet that tastes wonderful in both ice cream cones and as part of a dessert.
