Stracciatella with Custom-Developed Chocolate

Stracciatella ice cream was invented by an Italian gelato maker who noticed that his customers preferred ice cream with chocolate pieces. Inspired by this, he experimented with his recipe and created Stracciatella ice cream. It became an instant success and is now one of the most beloved ice cream flavors worldwide.

The original version of Stracciatella was based on classic Italian vanilla ice cream. The melted chocolate is stirred into the ice cream while it is still semi-liquid. As the ice cream freezes, the chocolate hardens into delicate streaks, giving Stracciatella its distinctive texture. The best way to enjoy this ice cream is with a sprig of fresh mint or a handful of ripe strawberries.

At Kastbergs, our Stracciatella ice cream is made from the finest quality milk and cream from Them Andelsmejeri in Central Jutland, blended with our custom-developed Dark Organic Chocolate (72.7%).

This signature chocolate was specially crafted by Joachim Kastberg in collaboration with Or Noir’s development team in Paris, ensuring it has the perfect flavor and crisp texture in ice cream.

We choose Them Andelsmejeri’s dairy for its exceptional quality, which is confirmed by various certifications and other satisfied customers. We also prioritize local and sustainable sourcing, and since the Them dairy farm is close to our production site in Herning, the milk never travels far. In fact, all of their milk is collected within a 30 km radius, reducing CO₂ emissions, which aligns perfectly with our sustainability values.

A Layered Ice Cream Experience

Stracciatella is made in layers, and at Kastbergs, this means:
Each tub is filled in three stages. After each layer, a spoonful of liquid Dark Organic chocolate is poured in and gently folded into the ice cream. This process is repeated three times until the tub is full, ensuring an even distribution of chocolate throughout the entire ice cream.

We use this same layering technique for other flavors, such as Rum Raisin Ice Cream, Nougat Honey Ice Cream, and Mint Chocolate Ice Cream.
