Danish Strawberry Sorbet

For many, one of the best parts of summer is enjoying sweet, fresh Danish strawberries, whether eaten straight from the stem, with milk, or in countless other ways. At Kastbergs, we also love Danish strawberries, and we’ve spent several years searching for the perfect berries to use in our vegan Kastbergs Strawberry Sorbet.

On Samsø, the Honeoye variety is grown, which is particularly well-suited for ice cream as it is packed with flavor and color. Additionally, the microclimate on Samsø is ideal for strawberry cultivation.

Each year, we purchase the late harvest of Honeoye strawberries from Samsø, ensuring that we can offer strawberry products made from the best strawberries available all year round.

Before each production, we thaw the frozen berries with a layer of sugar, a process that brings out even more flavor from the strawberries. This always happens with 10 kg of berries in a 20-liter container, and many of them are then blended before being made into the creamiest product with a fresh and intense strawberry flavor.

This sorbet is popular among both children and adults, who enjoy it as an ice cream cone at ice cream parlors or as a scoop or quenelle in restaurants, often paired with chocolate.
