The tonka bean comes from the tree Dipteryx odorata, which grows in South America. It is known for its intense aroma, reminiscent of a blend of vanilla, cinnamon, and almond. This unique combination makes it a favorite among chefs.

At Kastbergs, we’ve created a Tonka Bean Ice Cream. There are many opinions on what desserts the tonka bean pairs well with, such as Crème Brûlée or Panna Cotta, where its aromatic flavor is not overwhelmed by other components.

However, we’ve developed a dessert where the bean has plenty of contrast from caramelized pineapple, served with tonka bean ice cream.
