For us ice cream lovers, one of the most important qualities is the texture. Soft serve is famous for its smooth, creamy consistency, which makes it easy to eat and even easier to enjoy. That same texture enhances the experience of adding sauces and toppings—although at Kastbergs, we recommend enjoying the pure taste of the soft serve on its own. After all, if the ice cream tastes great by itself, why drown it out with too many extras? That said, toppings do have the advantage of allowing everyone to customize their dessert to their taste.

Lastly, nostalgia plays a big role in our love for soft serve. For many of us, it’s a reminder of childhood—of carefree, joyful times spent with family and friends. Soft serve brings back a sense of simplicity, happiness, and summer memories.

Our Soft Serve Variants

Vanilla Soft Serve
This rich and creamy gourmet Vanilla Soft Serve is made from our own soft serve mix, based on milk and cream with a fat content of 11%. The high fat percentage gives it a full, indulgent texture. To make sure it truly lives up to its name, we’ve added real Madagascar Bourbon vanilla pearls—only the very best. (You can read more about our vanilla here).

Chocolate Soft Serve
This variant is as creamy—if not creamier—than the vanilla, thanks to the addition of real chocolate. We use the same base mix as in the vanilla soft serve, but instead of adding vanilla pearls, we melt our own Kastbergs Dark Chocolate directly into the mix during pasteurization. The result is an exceptionally rich and indulgent chocolate soft serve.

Strawberry Soft Serve
Just like the others, our Strawberry Soft Serve is wonderfully creamy with a bright and natural strawberry flavor. If soft serve isn’t already the taste of summer, this certainly is—because nothing says summer quite like strawberries.

Our Soft Serve Mix

Crafted for creaminess, freshness, and perfect texture – with milk and cream from Them Andelsmejeri

As mentioned earlier, our soft serve mix is made from fresh milk and cream supplied by Them Andelsmejeri near Silkeborg. This mix has a fat content of 11%—slightly higher than the fat percentage found in our regular ice cream. That extra fat is key to achieving the soft, rich texture that defines our gourmet soft serve.

Freshness Matters

The milk and cream in our mix are always processed within 24 hours of delivery. Why? Because it ensures the freshest possible product and extends the shelf life of the mix—something especially important when it comes to soft serve. Our soft serve is delivered frozen, and must be thawed before being used in a machine. Once thawed, however, the mix only lasts for a limited number of days. That’s why freshness is so critical—to give the longest usable life after thawing and to maintain optimal quality.

Air: The Secret Ingredient

Soft serve machines don’t just freeze the mix—they also whip air into it. Our mix is designed to handle up to 70% overrun (air content), in part thanks to its rich fat content. But why add air at all?

Air plays a major role in the soft serve experience. More air results in a lighter consistency and a creamier, more luxurious mouthfeel. It also makes the ice more pliable and easier to dispense. Without enough air, soft serve can feel dense and heavy—but with the right balance, it becomes light, fluffy, and delicious.
