A classic of the modern dessert kitchen

The quenelle technique is one of the most iconic and recognised ways of serving in modern dessert presentation. The elongated, smooth shape of the ice cream signals precision and aesthetics – and calls for a steady hand. In the video below, you meet Sisse, a former chef on the Danish national culinary team. She demonstrates step by step how to master the quenelle technique – with a focus on the skilled touch expected in a professional kitchen.

With calm, precise movements, she shows step by step how you shape a quenelle. She starts by dipping a tablespoon in hot water – a classic, simple trick that helps the ice cream release easily from the spoon and gives the surface a glossy finish. Then she shapes the quenelle in two movements: First she pushes the spoon away from herself, across the surface of the ice cream. Not too deep – it's about working right at the surface, where the ice cream is most pliable. Then she draws the spoon calmly back towards herself in one continuous, curved movement. The result: a smooth, elongated shape of ice cream without cracks.

Practice makes the touch

Sisse recommends practising the quenelle technique with different types of ice cream – not for the sake of variety, but to train a feel for how different consistencies respond under the spoon. A mango sorbet doesn't behave like a raspberry sorbet, and it's precisely these small differences that demand attention. It's about developing precision and rhythm in the movement – but also about understanding the fine nuances from one ice cream to the next. In professional kitchens, it is persistent practice and repetition that refine the touch and make the technique a natural part of the work.

The quenelle as a visual expression of craftsmanship

A quenelle is more than beautifully shaped ice cream – it is visual proof of quality. We eat with our eyes, and the smooth, clean shape not only elevates the presentation but also says something about the craftsmanship behind it. For Sisse, the quenelle is a way to show precision, care and respect for the ingredients. That is why she returns to the technique again and again – as a clear mark of professionalism in every single dessert
