Responsibility for ingredients and nature

Making ice cream in small batches is also a way of looking after resources. We choose local ingredients, minimise waste and work closely with our suppliers.

Lokale råvarer

Local ingredients

Short distances from farm to table

Wherever possible we choose local Danish ingredients, and when we can, we choose local over a cheaper alternative from further away. Milk accounts for over 40% of our footprint, so our milk comes from Them Andelsmejeri just approx. 40 km from our production — where even the most distant farm lies less than 30 km from the dairy.

Ren energi

Clean energy

Heat from local biomass

Our custom-built boiler runs on straw bales from a local farm — biomass that might otherwise go to waste. All the electricity we purchase comes from renewable sources via RECS certification.

Mindre spild

Less waste

Every part of the ingredient put to use

We make ice cream in small batches as needed, so food waste stays low. The organic waste we do have is handled by Refood and turned into biogas or natural fertiliser — and we reuse ingredients wherever we can.

Emballage

Packaging

Reuse and biodegradable

Our ice-cream cups are made from biodegradable material, and our 5 L tubs are made from recyclable PP plastic. The milk is stored in reusable 1000 L tank containers — zero packaging waste on our largest ingredient.

Shorter transport

BUYING LOCAL SAVES CO₂

Transport accounts for over 25% of our total footprint. By moving ingredients closer, we have cut distances — and CO₂ — significantly. Measured per tonne of product:

76,415 g

Honey

Hungary → Central Jutland · 1,500 → 50 km

40,315 g

Strawberry & rhubarb

Poland → Samsø · 900 → 135 km

34,255 g

Cherry

Poland → Denmark · 900 → 250 km

2,466 g

Caramel sauce

Norway → Give · 510 → 42 km

1,054 g

Milk

Mammen → Them · 60 → 40 km

All foreign ingredients are chosen for best quality and grown responsibly — chocolate from Callebaut, vanilla from Madagascar, coffee from Peter Larsen.

Packaging

Larger packs, less waste

Packaging accounts for around 10% of our footprint. Together with our suppliers, we have negotiated larger pack sizes for most ingredients:

Berries (strawberry, raspberry, blackcurrant, cherry)
2.5 → 25 kg · −100% cardboard, −85% plastic
Liquorice
5 L boxes → 26 L bags
Caramel sauce
1 L bottles → 12 L buckets · −62.5%
Rum & whisky
1 L bottles → 25 L reusable containers

People

Sustainability is also about people

We want to give people a good job with good conditions, guidance and room to grow — and we gladly hire young people and create a setting that carries their potential further within the company. We also work with local schools such as Viborg Produktionsskole, where all our ice-cream signs are made.
