Quenelle – why the consistency of the ice cream matters
The quenelle technique takes more than a sharp hand – the consistency of the ice cream is absolutely essential. In this blog post, ice-cream maker Sisse shows how temperature and texture work together when shaping the perfect quenelle with both shine and precision.

The perfect quenelle? Consistency is the key to success
When it comes to the classic quenelle – the elegant, oval shape of ice cream – it is first and foremost the consistency of the ice cream that determines whether the result looks beautiful and inviting. To shape a quenelle that both holds its form and looks silky smooth, the ice cream must have exactly the right balance between softness and firmness. Ice cream that is too hard cracks and loses its shine, while ice cream that is too soft loses its structure and runs. Consistency is therefore the decisive factor for anyone who wants to take their desserts to the next level.

In the video below, ice-cream maker Sisse shows how the consistency of the ice cream is all-important when you want to succeed with a quenelle. See how the ideal consistency helps ensure the best result – and get inspired to work more consciously with texture in your own kitchen.
The temperature of the ice cream
The ideal serving temperature for a quenelle is around –12 °C to –10 °C – the perfect point between pliability and shape stability. To reach this temperature, we recommend letting the ice cream stand for 5–15 minutes at room temperature, so the consistency becomes even and easy to shape.
Next, the spoon should be warm and slightly damp – for example by dipping it in ~60 °C water and wiping off the excess water. The warm metal glides more easily through the ice cream and creates a glossy, air-bubble-free surface.
Quick guide to consistency and shine: - Temper the ice cream to –12 °C to –10 °C (5–15 min tempering)- Dip the spoon in 60 °C water and wipe dry- Shape the quenelle with precision and make sure to keep the surface glossy- Reheat the spoon between portions for consistently glossy results
