What makes Kastbergs cream ice cream different?

What makes Kastbergs cream ice cream different?

Fresh Danish milk – not powder

Our milk and cream come from Them Andelsmejeri, a cooperative dairy that has produced dairy products since 1888. The dairy is located less than 40 km from our production, and the longest distance from farm to dairy is 30 km.

Handcrafted production

Kastbergs makes ice cream in Herning with a focus on flavour development and texture. Every variety is developed to work in professional kitchens – a texture that holds from freezer to plate, with no ice crystals and perfect scoopability.

No unnecessary additives

No artificial colourings, no unnecessary additives. The flavour comes from the ingredients: real vanilla, fresh strawberries from Samsø, roasted pistachios, our own chocolate.

Cream ice cream vs. gelato – what is the difference?

Fat content

Cream ice cream: 10–18% milk fat. Gelato: 4–9%.

Air content

Cream ice cream has a higher air content (~50%). Gelato is denser.

Temperature

Gelato is served warmer (-12 to -15°C) than cream ice cream (-18°C).

Texture

Cream ice cream is creamy and rich. Gelato is denser, with a more pronounced intensity of flavour.

"We call it cream ice cream because it is made with Danish cream. But our Italian-inspired production method gives a texture that comes close to gelato."

Frequently asked questions about dairy ice cream

Frequently asked questions about dairy ice cream

What is dairy ice cream?

Dairy ice cream is ice cream made with milk and cream, with a minimum of 9% milk fat. This gives the creamy, rich texture that sets it apart from other types of ice cream. Kastbergs dairy ice cream is made with fresh milk and cream from Them Andelsmejeri in Denmark – not with milk powder or vegetable fat.

What is the difference between dairy ice cream and gelato?

Dairy ice cream typically has a higher fat content (10–18%) and more air than gelato (4–9% fat). Gelato is served at a slightly higher temperature and is denser in texture. Kastbergs dairy ice cream combines Danish cream with Italian-inspired production methods to achieve a creamy, intensely flavoured ice cream.

Why is Kastbergs dairy ice cream only for professionals?

Kastbergs sells exclusively to foodservice – restaurants, hotels, cafés and ice-cream shops. This means your guests can only get Kastbergs at your place, not in the supermarket.

How many dairy ice cream varieties does Kastbergs have?

Kastbergs has 25 dairy ice cream varieties, from classics like vanilla and chocolate to more adventurous flavours such as tonka bean, olive oil and Cask Whisky with Stauning. The range is continually updated with new varieties.

Where does the milk in Kastbergs dairy ice cream come from?

All milk and cream comes from Them Andelsmejeri, which is located less than 40 km from Kastbergs' production in Herning. Them has produced dairy products from local farms since 1888, and the longest distance from farm to dairy is only 30 km.

Can I order Kastbergs dairy ice cream for my restaurant?

Yes. You order through your foodservice wholesaler. Kastbergs is available from Dagrofa Foodservice, Dansk Cater and Hørkram Foodservice. Contact us on 2980 5400 if you have any questions.
