Pure ingredients
Nothing unnecessary
We add neither colouring nor artificial flavourings. Not as a marketing claim, but because we have no need for them: when the milk, cream and fruit are good enough, they should not be masked.

We build the tub up in layers
The ice cream is not filled in one go. We lay down a layer of ice cream, draw sauce or fruit across it, spread chunks — and repeat until the tub is full. It takes longer than pumping it full in one pass, but it is the difference between caramel running in ribbons through the entire tub and sitting as a dollop on top.
Why layers matter to the guest
A scoop is taken straight down through the tub. When the layers are built up properly, the guest gets ice cream, sauce and chunks in the same scoop — whether the tub is new or almost empty. The last scoop should taste like the first.
The short ingredient list
Milk and cream from Them Andelsmejeri, sugar, egg yolk and the main ingredient itself. That is the foundation of our dairy ice cream. The shorter the list, the clearer each ingredient stands out — and the less there is to hide behind if quality falls short.
The colour comes from the fruit
Our raspberry sorbet is not bright red, and our pistachio ice cream is not light green. Fruit and nuts have the colours they have. A muted, natural colour is not a flaw — it is the hallmark that nothing has been added to make the ice cream more photogenic.
What we say no to
No artificial aromas, no colourings, no powder bases and no vegetable fat in place of cream. This makes some flavours harder to make and a few downright impossible. Those we simply don't make.
