Ingredient story

Hazelnuts

Piedmont, Italy

For our nuts, we go beyond Denmark's borders — to Piedmont in northern Italy, home of the world's most esteemed hazelnuts. Here it isn't about being local, but about finding the very best ingredient for the job.

Hasselnødder

The Piedmont nut

Hazelnuts from Piedmont are famous throughout gastronomy for their richness and fine, roasted aroma. The region's soil and climate produce a nut with a depth that lifts a hazelnut ice cream from pleasant to unforgettable. The Tonda Gentile Trilobata variety is round, sweet and has a thin shell that comes away easily during roasting. That is why it is the preferred nut among chocolatiers and pastry chefs. We use the nuts as a pure hazelnut paste, so the ice cream gets the full, roasted flavour without added aroma.

Local where it makes sense

We source as much as possible in Denmark — but when an ingredient is world-class in a particular place, we travel for it. Hazelnuts are one of those cases where origin simply matters most for flavour. If an ingredient can be grown in Denmark, we choose the Danish one – even when a foreign alternative is cheaper. When we go abroad, we hold the same standards for quality and responsibility: we choose suppliers who consider both the environment and the local communities the ingredient comes from. This also applies to our chocolate from Callebaut and vanilla from Madagascar.
