Ingredient story
Stauning Whisky
Stauning Whisky · Skjern, Denmark
From an old slaughterhouse by Ringkøbing Fjord, Stauning makes whisky from Danish barley and floor malting — one of the few distilleries in the world that still malts everything itself. We use their whisky where we want warmth and depth in our ice cream.

Neighbours in West Jutland
It is less than an hour's drive from our ice-cream dairy in Herning to Stauning. That means we know the people behind the casks and can collect the ingredient where it is made — the same principle as with the milk from Them.
What whisky does for ice cream
Alcohol lowers the freezing point, so the ice cream becomes softer and easier to scoop straight from the display freezer. At the same time, the whisky carries smoke, vanilla and dried fruit from the cask into the flavour, rounding off the sweetness and giving the ice cream a grown-up character.
Dosed with restraint
We add only enough for the character of the cask to be felt behind the creaminess — not so much that the ice cream turns sharp or won't set. We find the balance batch by batch.
