Kastbergs Gourmet Soft Serve Mix

Soft serve is a beloved dessert among children and adults alike. There is simply something special about buying an ice-cold soft serve on a warm summer day and enjoying the sweet flavour as it melts in your mouth. But why is soft serve so popular? Why can't we get enough of it? One of the things we ice-cream lovers care most about is the texture. Soft serve is known for its soft, creamy texture, which makes it easy to eat and enjoy. This texture is also why soft serve can add a creamy note to all the different toppings and sauces we might put on it. At Kastbergs, however, we don't recommend using toppings: if the ice cream tastes good enough on its own, why drown out the flavour with a lot of toppings? Of course, toppings do have the advantage that you can tailor soft serve to any taste preference.

Finally, it is impossible to ignore that one of the biggest reasons we love soft serve is nostalgia. For many of us, soft serve is part of our childhood, reminding us of happy times with family and friends. Soft serve can take us back to a time in our lives when everything was simpler and more carefree.

Our soft serve varieties

This delicious, creamy gourmet Vanilla Soft Serve, made on our own soft serve mix, is made with milk and cream and has a fat content of a full 11%. The high fat percentage helps make the soft serve rich and creamy. To put the cherry on top and make a vanilla soft serve that truly tastes of vanilla, we have of course added genuine Madagascar Bourbon vanilla pearls, the very best of the best. This gourmet soft serve is truly delicious, and if anything even creamier than the vanilla, as it contains real chocolate, which adds extra richness to this fantastic soft serve. The soft serve mix is essentially the same as for the vanilla, but instead of adding vanilla pearls to the mix, we melt our own Kastbergs Dark chocolate, developed in-house, directly into the mix during pasteurisation.

Like the other varieties, our Strawberry soft serve is really creamy and delicious, with a wonderful strawberry flavour. If soft serve on its own doesn't taste enough of summer, strawberry soft serve certainly does, because what is more characteristic of the taste of summer than strawberries?

As mentioned, we use a soft serve mix made with milk and cream, delivered by Them Andelsmejeri near Silkeborg. This mix has a fat content of 11%, which is slightly higher than the normal fat percentage of our other cream-based ice creams.

The milk and cream in our soft serve mix are always processed within 24 hours of delivery. We do this for the simple reason that it gives the freshest soft serve and the longest shelf life, which is particularly important for soft serve. Our soft serve is delivered frozen and must therefore be thawed before it can be run through a soft serve machine, which freezes it again and pumps air into the ice cream, turning it into the light, creamy mass we know and love. But once the soft serve mix has been thawed, it can only keep for a limited number of days. For exactly this reason, soft serve in particular must be made as fresh as possible, to have the longest possible shelf life after thawing.

With soft serve, the machines always pump air into the ice cream as it comes out. Our soft serve mix can handle up to 70% air content, partly because, as mentioned, we have a very rich soft serve with a full 11% fat content. The fat content helps ensure creaminess. But why do we pump air into soft serve?

The air content of soft serve is an important factor that can change the overall taste experience. If the ice cream is full of air, it will have a lighter texture and feel fuller in the mouth. It also makes the ice cream more supple, which makes it easier to pump out.
