What is sorbet?

Sorbet is a frozen dessert based on fruit, sugar and water - without milk or cream. Historically, sorbet was used as a palate cleanser between courses, known as the trou normand in the French culinary tradition. Today sorbet is served as a dessert in its own right, as part of plated desserts, or as a refreshing end to a meal.

A quality sorbet is recognised by its high fruit content, creamy texture and pure flavour without artificial flavourings. The higher the fruit content, the more intense and natural the flavour.

Frequently asked questions about sorbet

Frequently asked questions about sorbet

What is sorbet made of?

Sorbet is a frozen dessert made from fruit or berries, sugar and water - completely free of milk and cream. Kastbergs sorbets have a high fruit content, which gives them their intense flavour and creamy texture. We use no artificial colourings or unnecessary additives.

Is sorbet vegan?

Yes. All 15 Kastbergs sorbets are 100% vegan and dairy-free. They are made from fruit and berries without any animal products, which also makes them suitable for guests with lactose intolerance or a milk allergy.

What is the difference between sorbet and ice cream?

The biggest difference is the fat content. Dairy ice cream is made from milk and cream with at least 9% milk fat, while sorbet is 100% dairy-free and fruit-based. Sorbet has a lighter, more refreshing texture and a purer fruit flavour.

Which sorbet flavours does Kastbergs offer?

Kastbergs offers 15 seasonal sorbet varieties: rhubarb, gooseberry, strawberry, raspberry, elderflower, apple, blackcurrant, sea buckthorn, orange, passion fruit, mango, lemon, coconut, pineapple and cherry. The range follows the seasons.

Can sorbet be used as an intermediate course?

Yes, it is a classic practice known as "trou normand". A scoop of lemon or elderflower sorbet served between main courses cleanses the palate and prepares your guest for the next course. It requires zero preparation time in the kitchen.

Where does the fruit in Kastbergs sorbet come from?

Kastbergs uses Danish ingredients wherever possible. Strawberries (Honeoye) from Samsø, blackcurrants (Ben Tron) from Kjellerup approx. 45 km from our production, and the elderflower syrup is developed in-house by Joachim Kastberg. Other fruit is imported from certified suppliers.
